Macros are for one serving as written. Make gives you more servings of the same size; Portion resizes one serving and moves the macros with it.
Ingredients
- 700g (1.5 lb) chicken breast, sliced thin
- 400g (1.75 cups) light coconut milk
- 250g (3.5 cups) mushrooms, sliced
- 150g (1 medium) onion, sliced
- 60ml (1/4 cup) lime juice
- 20g (4 tsp) fresh ginger, sliced into coins
- 12g (4 cloves) garlic, minced
- 1 tsp (4ml) sesame oil
- 3 tbsp fish sauce, 1 tsp sugar, 1-2 red chillies, coriander
- 900ml / 4 cups chicken stock; 2 lemongrass stalks, bruised
10 ingredients, each with the gram weight the macros above were computed from.
Method
- Warm the sesame oil and cook the onion, ginger, garlic and bruised lemongrass 3 min, just until fragrant.
- Add the stock and simmer 10 min with the lid off. This is where the broth actually gets its flavour, so do not rush it.
- Fish out the lemongrass stalks and the ginger coins.
- Add the mushrooms and simmer 5 min.
- Drop the heat until the surface is barely moving, then add the sliced chicken. It will cook through in 4 min at this temperature and go tough in 4 min at a boil.
- Stir in the coconut milk and warm it through without boiling - boiled coconut milk separates into oil and grit.
- Take the pot off the heat entirely before the lime juice and fish sauce go in. Heat drives off everything sharp and bright about both.
- Taste and adjust: it should land sour first, then salty, then sweet. Finish with chilli and coriander.

How Plus worksTip: lime and fish sauce go in off the heat, always. Simmered, they turn flat and the soup tastes muddy instead of sharp.
